French Kiss Oysters are a Canadian oyster from Miramichi Bay on the Acadian Peninsula near Negauc, New Brunswick. They are a larger version of the famous Beau Soleils oyster, which is simply allowed to grow for an additional couple of years to reach a size of about 3 1/2 inches.
